In particular, he produces a Blanc de Noir champagne from Pinot Noir vines located in Verzenay, a commune of Grand Cru. After a prolonged aging in cellar of about 5 years, Hughes tempers the addition of dosage liquor in order to let its wine express itself naturally.
The vintage 2008 champagne is produced according to this same rigor and this intact passion of the land and the vines.
